2 cups all-purpose flour
1 cup sugar
1teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon nutmeg
1/4 cup butter
1 1/4 cup buttermilk
1 large egg
1 table spoon grated lemon peel
1 cup blueberries
1 tablespoon or more lemon juice
1/2 cup or more powdered sugar
Preheat oven to 400 degrees
Lightly spoon flour into measuring cups and combine with other dry ingredients.
Cut in butter with pastry blender until mixture resembles coarse meal.
Combine wet ingredients and rind and stir well.
Add to flour mixture, stir just until moist.
Fold in blueberries.
Spoon into 12 muffin cups that have been coated with cooking spray.
Bake for 20 minutes or until muffins spring back when touched.
Combine powdered sugar and lemon juice and drizzle over muffins.
